Happy Merry Christmas

Well peeps, Christmas has come and it is almost gone all over again. It has been an excellently lavish and gluttonness (?) day in our house, but first, lets talk about last night when I made these:

Stuffed Red Peppers

Yes yes, I had the honor of making Christmas Eve dinner for my family and I decided to keep it light and simple since I knew we’d be indulging all day today. With that in mind, the decision was easy, I absolutely had to make Bethenny Frankel’s Stuffed Red Peppers. These are super easy to make and a total crowd pleaser every time. I usually serve this with quesadillas and a citrus, broccoli slaw, but I didn’t want to fill the fridge with leftovers so I just served them with some tortilla chips to keep it simple. This recipe is super yummy and low in calories. It’s really impressive at dinner parties and super convenient because you can make the stuffing the night before so you just have to cook the peppers for 30 minutes before everyone arrives. I have made this recipe MANY times and it is always a crowd pleaser.

I topped off my dinner with a DE-licious ginger cupcake with cream cheese frosting made by my brother’s fabulous girlfriend. Did I mention she made us a ton of delicious holiday cookies and other treats because she loves to bake? She’s not even here, but she just made them for us to enjoy. Clearly I am a huge fan because I pretty much hate baking.

Well that’s pretty much it. We’ve had a great day relaxing and enjoying time with each other today and I’ve almost watched enough trashy television to last me through the entire next semester (I don’t have TV in Texas).

Also, I know this is difficult to believe after my last post, but tomorrow I am driving BACK to New Jersey to take my brother home and to head into the city for a friend’s birthday dinner! I’ll report back on Tuesday and cross your fingers for no car trouble!
