So I’m currently sitting at the dinner table doing nothing while Matt and Nolan cook dinner (next blog post), so I decided I should probably do my weekly update.
The good news: I survived Orientation and exactly 3 days of law school. The bad news: There are still like 29 weeks to go. So far, I’m loving my classes and meeting some interesting characters along the way. I remembered today that I forgot to tell you all about my wonderful send off in Laguna before driving out to Austin with two of my best friends Lizzy and Maddy. Maddy is from Laguna and Lizzy and I usually try to make a trip down there every summer to visit her and her family. This year we had the usual cook out with friends and family to celebrate Lizzy’s 25th birthday and my moving to Austin.
The best thing about the Bell house has to be the amazing garden in the back. They grow all sorts of things and I always tell them that when I buy my first house I want them to come over and help me set up a garden. There are so many delicious variations of tomatoes. There’s squash, strawberries, beans, lemons, nectarines (or peaches, I can never remember) and so many more delicious treats. Maddy’s sister Char brought a beehive home from college so that’s now in the garden as well. It is so amazing and you can really taste the difference in the quality of food.
Here are some photos below:
After the soup, chips and salsa and tacos, it was time for the main event! Dessert!!!!! Luckily, Sarah was there, so I knew one delicious dessert was on the way. KEY LIME PIE (one of my favorite desserts)!
You can find the recipe here: Sarah’s Key Lime Pie
Char, Maddy’s sister, also made dessert. She had been dying to try out these Bailey’s chocolate cupcakes and oh my good they were so good! I don’t know the recipe, but perhaps she will post it in the comments section! I know she has a blog, but I can’t remember what it is at the moment. Here are the cupcakes:
The icing on the cupcakes was AH-mazeballs. Nomnomnomnomnomnom.
It was so nice to spend my last few days as a Cali resident (for now anyway) with great friends and family. As usual, thank you Bell family for having me and I can’t wait for my next visit!
More updates to come so stay tuned. I’ll be blogging about Matt and Nolan’s Chicken and Eggplant parmesan dinner in the next few days!
Stay well!
